Fresh & wild yellowfoot chanterelles are smaller and more delicate than their larger cousins - golden chanterelles. Yellowfoots have an exotic earthy/fruity flavor that is delicious. Their texture is moister and chewier than that of golden chanterelles. These mushrooms are entirely edible. Wipe with a damp cloth or brush off to clean before cooking. Sauté or roast with butter and herbs for a real culilnary treat. Serve alongside red meat, pork, poultry, game, or salmon entrées. Use in soups, stuffings, and sauces too.
